While it is possible to try and cram as much ice cream as you can into the machine, it is advisable to stick to the recommended capacity, hence giving the mixture enough space to properly aerate. This will ensure that your ice cream becomes thick and fluffy. Most people have found that over-filling the canister resulted in a watery and harder consistency reminiscent of sherbets. Sticking to the 6 quarts consistency will also make it far easier to churn the ice cream, especially if you’re using the hand crank.
